East African food has many influences, most importantly Swahili cuisine. Most countries along the Indian Ocean speak the Swahili language and have similar dishes. We use mild spices and hot spices in a moderate way, as well as aromatic spices and herbs. Our typical food in East Africa is Ugali, made with maize or corn flour and accompanied by vegetables, fish, and meat. Ugali, maize, rice, cassava, wheat, and sorghum are popular staple foods in East Africa.
